Valpolicella Ripasso DOC is obtained by contacting the Valpolicella base with the remaining Amarone marc for about 15/20 days. It is characterized by a greater structure and longevity than the base of Valpolicella, with a higher alcohol content, lower acidity and greater roundness, with a higher value in extracts and phenolic substances. Ruby color with garnet reflections, it offers a mildly ethereal aroma and pink fruit with vanilla notes; An aroma refined, harmonious, dry and velvety.
